Coltsfoot, or tussilago, is a wild edible plant which is prized by foragers and herbalists alike. Part of the daisy family, this wild weed's pretty flowers actually resemble a dandelion while in bloom.
The leaves of the coltsfoot plant are packed with nutrients. They are a great source of a range of minerals, and contain unusually high levels of sodium, calcium and magnesium.
Young coltsfoot leaves can be added to soups, stews and salads, but should always be rinsed after boiling to remove any bitter flavours. When dried, the leaves and flowers can also be made into an aromatic tea.
